  • 8 oz fettuccine pasta (or your favorite pasta)
  • 2 tablespoons unsalted butter
  • Salt and pepper (to taste)
  • ½ teaspoon garlic powder (optional, for extra flavor)
  • Fresh parsley (chopped, for garnish)
  • 1 tablespoon Italian seasoning (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add fettuccine pasta and cook according to the package instructions (about 8-10 minutes). Drain and set aside, reserving a small cup of pasta water.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add sliced chicken breasts and cook for 5-7 minutes, turning occasionally, until golden brown and fully cooked. Season with salt, pepper, and optional garlic powder. Remove chicken from skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in heavy cream and bring to a simmer. Stir constantly for 3-5 minutes, allowing the cream to thicken slightly.
  5. Gradually add grated parmesan cheese, stirring until the cheese melts completely and the sauce is smooth. Season with salt, pepper, and optional Italian seasoning.
  6. Add the cooked pasta to the skillet with the Alfredo sauce, tossing gently to coat. If the sauce is too thick, add a bit of reserved pasta water to loosen it up.
  7. Return cooked chicken to the pan and stir to combine with pasta and sauce. Heat through for 1-2 minutes.
