Perfect for any occasion, from a cozy family dinner to a summer picnic, this cake offers the nostalgic flavors of sweet strawberries combined with the classic moist texture of a homemade cake. The best part? You can whip it up in no time with a few simple ingredients and enjoy it with friends and family.

Ingredients

Ingredients

Scale

For the Cake:

  • 1 box white cake mix
  • 1 (3oz) box strawberry Jell-O
  • ⅔ cup vegetable oil
  • 4 eggs, beaten
  • 1 cup frozen strawberries (thawed, with the juice)

For the Frosting:

  • 1 (16-ounce) box confectioners’ sugar
  • 1 stick (8 tablespoons) butter, softened
  • ½ cup frozen strawberries (thawed)

Instructions

  1. Line two 9-inch cake pans (or three 8-inch pans) with wax paper and preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the white cake mix and strawberry Jell-O. Stir until well incorporated.
  3. Add the vegetable oil, beaten eggs, thawed strawberries, and strawberry juice. Mix everything until the batter is smooth and combined.
  4. Divide the batter evenly between the prepared pans.
  5. Bake in the preheated oven for 15-20 minutes, or until a toothpick comes out clean when inserted into the center of the cakes.
  6. Remove from the oven and allow the cakes to cool completely on a wire rack.
  7. To make the frosting, beat together the confectioners’ sugar, softened butter, and thawed strawberries until smooth and creamy.
  8. Once the cakes are fully cooled, spread the frosting evenly over the top of one cake layer.
  9. Place the second cake layer on top and frost the entire cake with the remaining frosting.
  10. Optional: Decorate with additional fresh strawberries for a beautiful finishing touch.

Notes

  • Be sure to drain any excess water from the thawed strawberries before adding them to the batter.
  • For a thicker frosting, you can add more powdered sugar until you reach your desired consistency.
  • You can customize this cake by adding other fruits or a drizzle of strawberry syrup on top for extra flavor.
  • If you prefer a lighter version, you can use a sugar-free Jell-O mix and low-fat cake mix.
