- 3–4 drops green food coloring (optional)
For the Cream Cheese Filling:
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- 1 tbsp key lime juice
For the Frosting:
- ½ cup unsalted butter, softened
- 4 oz cream cheese, softened
- 2 cups powdered sugar
- 1 tbsp key lime juice
- 1 tsp vanilla extract
- Green sugar sprinkles (optional)
- Lime slices for garnish
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour and baking powder. Set aside.
- In a large mixing bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract, key lime zest, and key lime juice.
- Gradually add the flour mixture and buttermilk in alternating batches, mixing just until combined. Stir in green food coloring if using.
- Fill cupcake liners about 2/3 full and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
- In a small bowl, mix cream cheese, powdered sugar, and key lime juice until smooth. Cut a small hole in the center of each cupcake and fill with the mixture.
- Beat butter and cream cheese together until creamy. Gradually add powdered sugar, then mix in key lime juice and vanilla extract until smooth.
- Pipe or spread the frosting over cooled cupcakes. Sprinkle with green sugar sprinkles and top with lime slices.
