  • ½ cup buttermilk
  • 34 drops green food coloring (optional)

For the Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 tbsp key lime juice

For the Frosting:

  • ½ cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 tbsp key lime juice
  • 1 tsp vanilla extract
  • Green sugar sprinkles (optional)
  • Lime slices for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour and baking powder. Set aside.
  3. In a large mixing bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract, key lime zest, and key lime juice.
  5. Gradually add the flour mixture and buttermilk in alternating batches, mixing just until combined. Stir in green food coloring if using.
  6. Fill cupcake liners about 2/3 full and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  7. In a small bowl, mix cream cheese, powdered sugar, and key lime juice until smooth. Cut a small hole in the center of each cupcake and fill with the mixture.
  8. Beat butter and cream cheese together until creamy. Gradually add powdered sugar, then mix in key lime juice and vanilla extract until smooth.
  9. Pipe or spread the frosting over cooled cupcakes. Sprinkle with green sugar sprinkles and top with lime slices.
