Description

Looking for a snack that perfectly balances heat and comfort? Jalapeño Cornbread Poppers might be the answer! These little bites of joy are perfect for any occasion—whether you’re hosting a game day party, a festive dinner, or just craving something spicy and delicious to enjoy with your family. The combination of tender cornbread, cheesy goodness, and the kick of jalapeños makes these poppers an unforgettable treat.

Ingredients

Scale

12 Jalapeño Peppers, halved and seeded
1 box (15 oz) Cornbread Mix
1 ½ cups of Shredded Cheddar Cheese
1 cup Canned Corn, drained

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, prepare the cornbread mix according to the package instructions.
  3. Stir in the shredded cheese and canned corn into the batter until well combined.
  4. Spoon the mixture into each jalapeño half.
  5. Arrange the stuffed peppers on a baking sheet and bake for about 15-20 minutes or until the cornbread is golden and cooked through.
  6. Allow to cool slightly before serving. Enjoy warm!

Notes

  • Control the heat by removing the seeds and membranes from the jalapeños for a milder flavor, or leave them in for more spice.
  • Feel free to try different cheeses, such as Pepper Jack or Monterey Jack, for a unique twist.
  • You can prepare the poppers ahead of time by stuffing the jalapeños and refrigerating them until you’re ready to bake.
  • These poppers are great for doubling the recipe to serve a larger crowd.
