4 boneless, skinless chicken breasts
½ cup honey
½ cup BBQ sauce
1 tbsp olive oil
1 tsp garlic powder

4 medium potatoes, diced
2 tbsp butter
1 cup heavy cream
½ cup grated Parmesan cheese
3 garlic cloves, minced
Salt and pepper to taste
Fresh parsley for garnish


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix honey, BBQ sauce, olive oil, garlic powder, salt, and pepper.
  3. Coat chicken breasts with the BBQ honey mixture and place them on a baking sheet.
  4. Bake chicken for 25-30 minutes, or until fully cooked (165°F internal temperature).
  5. While chicken bakes, prepare the potatoes.
  6. Boil diced potatoes in salted water for 10-15 minutes until tender.
  7. Drain potatoes and set them aside.
  8. In a large pan, melt butter over medium heat and sauté garlic for 1-2 minutes.
  9. Add heavy cream and bring to a simmer.
  10. Stir in Parmesan cheese until smooth and creamy.
  11. Add the cooked potatoes, salt, and pepper. Stir until well-coated.
  12. Garnish with fresh parsley.
