Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in vanilla extract, lemon zest, and lemon juice.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until combined.
  6. Add the black light-reactive food coloring and stir until the batter reaches a glowing neon hue.
  7. Divide the batter evenly between the prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. While the cakes are cooling, whip the heavy cream and powdered sugar together to form stiff peaks. Add the food coloring to the frosting, adjusting the color to enhance the glow effect.
  10. Once the cakes are completely cooled, frost with the glowing whipped cream and optional edible glow-in-the-dark powder.
  11. Chill the cake in the refrigerator for at least 30 minutes to enhance the glowing effect before serving.
